sour sweet salad-in-a-vase
why hide your beautiful salad in a bowl?
if you eat a rainbow you want everybody to see it! so show it off in one of your most beautiful vases!
pimps up every (midsummer) buffet.
for a portion of four you need:
1 package of kelp noodles (sea weed noodles) rinsed 1 long sweet red pepper, chopped 3 stems of celleri, chopped
kernels of one pomegranate
2 dl almonds (ideally soaked & dehydrated, this makes them extra life and crunchy J )
for the dressing:
juice of 3 limes
3 tbsp sesame oil
1 tbsp of your favourite raw sweetener (honey, agave sirap or yacon sirap)
1 tsp of Himalaya salt 5-6 dried lime leaves, crumbled
1 clove garlic, mashed
1 dash of chilipowder
some celleri leaves for decoration
mix all ingredients for the dressing and pour it over the kelp noodles,
let soak for at least ½ hour.
mix all ingredients for the sallad or layer them carefully in a bowl/vase, decorate and serve.
