drink your gingerbread!

I hope you do enjoy every second of the holidays and staying away fro the sugary treats is not too too tough…
we have a little tip for you today how you may treat your tastebuds to the flavor of gingerbread (in Swedish “pepparkaka”) without all the calories, sugars and white flower…
you simply drink your gingerbread! ;)
it’s of course inspired by our last journey again, the Indian Masala Chai was way too good to stay away from, but having come home we made our own creation by substituting the black tea, milk and sugar.
here is how it works:
(makes 4 cups)
1 tsp cardamom seeds
½ tsp black pepper (not ground)
1 tsp cloves
1 cm of fresh ginger in small cubes
4 cm of cinnamon stick, crumbled
ca 500 ml hot water
250 ml nutmilk, ricemilk, oatmilk or soymilk
1 tbsp honey
in a pot dryfry all the spices for about two minutes, stir so nothing sticks to the pot, pour the hot water over it and let cook for at least five minutes, turn off the heat, and while stirring add the honey and then carefully the milk of your choice. Keep stirring while your spice tea heats up. With nutmilks you have to be careful to not heat too much, otherwise it may become grainy. Pour into your favorite mugs or bring along in your thermos and simply enjoy.
what’s left in your pot can be reused again, just cover the spices with some water and let sit until your next batch of tea is made, by then the spices have given a lot of taste to the water already.
