breakfast the kanthaloor way

this recipe is only very partially raw, but very nutritious and absolutely vegan. This is just one example of the treats that beautiful Punjam served us every morning.

a simple dal

most dal recipes are quite simple to prepare. the standard preparation begins with boiling a variety of lentils (or a mix) in water with some turmeric, salt to taste, and then adding a fried garnish at the end of the cooking process. in some recipes, tomatoes, tamarind, unripe mango, or other ingredients are added while cooking the dal, often to impart a sour flavor. here onion and curry were the main ingredients.

steamed rice noodles, two nests per person

coconut milk, spiced with some honey and cardamom, ca 1 dl per person

fresh fruit on the side, here guava directly from the tree.

eat with your bare hand to add energy and get in touch with the food, mixing everything together, ideally while you enjoy the view over an Indian national park ;)
