5 o'clock sunrise

ok, the sun goes up at precisely 5:23 these days, in exactly the color you see besides :)

what better than packaging it into an uplifting smoothie that balances your acids, is full of vitamins, antioxidants and minerals and keeps you satisfied for a couple of hours?

this is the perfect and quick breakfast for all you that need fresh energy to start into the new working season, or for the lucky ones that have too many berries in the garden these days….

for ca 1 liter sunrise you need:

(serves 2 or 1 for both breakfast and a snack in-between)

3 dl red currants (or any other red/sour berries, fresh or from the freezer)

1 ripe banana 1 tablespoon kokonutoil

1 tablespoon fresh lemon juice

1 dl soaked (over night) and well rinsed buckwheat

1 dl soaked cashew nuts (10 minutes)

a pinch of vanilla powder

ca 3,5 dl water

some honey if needed

put all ingredients into a high speed blender and mix until smooooth!

add some more water if needed for right consistency.

pour into your favorite glass.

if you need that extra gloom today you make it “extra healthy” by adding some chlorophyll: just be generous when picking your berries and let some stems and berry leaves slide into the mixer ;)

and there is an extra bonus: this serves perfectly fine as ice-cream as well, just pour any left overs (trust me there won't be any) into small forms or freeze in a bigger cube and grind to a creamy sorbet once needed.
