chicken saté fakes
well, I have been promising this recipe on fb last week, or the week before? for the deepening class for raw food educators last week by Gothenburg our group created "4 small asian dishes" for dinner, I pitched in with the poultry ;)
makes about 8 sticks: 2dl brazil nuts, soaked over night ½ dl mesquite 1 dl nutritional yeast (b-yeast) 1 clove garlic 1 tsp cumin, pulverized 1 tsp coriander, dried & pulverized ½ tsp turmeric ca. 1 tbsp water ½ tsp seasalt 8 sticks in a food processor grind the nuts to a fine paste, add mesquite, nutritional yeast and garlic and mix again. Then add all spices and grind again, carefully add water until you get a dry, but sticky dough. It needs to be able to stick to the sticks ;) then take a little handful of dough and wrap around the first stick, see if it stays on. adjust the dough into eithr direction with more water or more nutflower.
the saté sticks can be dried in a dehydrator at 42° for about 8 hours, but it is very possible to enjoy them directly as they are!
preferably to be eaten with your favorite (raw) peanut- or chillidressing and some fresh sallad.
